Ingredients

1 tbs coconut oil

6 cloves garlic, minced

1 shallot, diced

4 tbs spicy chilli butter (replace with mild if desired)

400ml coconut cream

2 cups liquid chicken or veggie broth

1 packet hard tofu, cubed

1 small broccoli, chopped
-
250g mushrooms, sliced
-
1/4 red cabbage, thinly sliced

2 bundles vermicelli rice noodle, to serve

Bean sprouts, to serve
-
Coriander, to serve
-
Chilli, sliced, to serve

Lime wedge, to serve

1 teaspoon shrimp paste
-
2.5cm ginger, minced
-
2 tsp turmeric
-
1/2 stalk lemongrass
Laksa Spices
Directions
Heat the coconut oil in a large saucepan or wok.
Add the garlic and shallot. Sauté for two minutes.
On medium heat, add spicy chilli butter into a sauce pan, stirring to break down the nut butter. Add the laksa spices and stir.
Once fragrant, add in coconut cream, chicken stock, broccoli and mushrooms. Stir well, cook for 15 or so minutes.
Add tofu, simmer for 5 minutes.
Meanwhile cook vermicelli as per packet instructions.
Top with cooked vermicelli, red cabbage, bean sprouts, coriander, chilli and a wedge of lime to serve.
