Ingredients

100g almond meal

145g plain flour

185g butter, softened

220g caster sugar

3 eggs

1 tsp vanilla paste

1 tsp baking powder

1 pinch of Himalayan salt

300g rhubarb, trimmed to 4cm pieces

2 tbs flaked almonds blanched
Directions
Preheat the oven to 170C. Butter and line a 22cm springform cake tin.
In a mixing bowl, beat the butter and sugar until pale and creamy. Add the eggs, one at a time, making sure to beat well after each addition.
Add in the vanilla. Fold the almond meal in. Sift in the flour, baking powder and salt, mix gently to combine.
Stir through 2/3 of the rhubarb, then pour the mixture into the prepared tin and smooth out the top.
Decorate the top with the remaining rhubarb and flaked almonds.
Bake for 1 hour and 10 minutes or until a skewer comes out clean when inserted into the centre of the cake.
Allow the cake to cool in the tin for 5 minutes before serving. Enjoy!
Recipe Note
* A dusting of icing sugar on top is a great addition if you like
