Ingredients

2L Beef Pho Liquid (or 1/2 cup broth powder and 2L liquid)

2 cups water
-
250g mushrooms, sliced

2 carrots, sliced

2 brown onions, sliced
-
1 leek, white only sliced
-
1 tsp fine pink Himalayan salt
-
1tsp fish sauce
-
1 tsp five-spice powder
-
2tsp fresh ginger
-
3 star anise
-
1 cinnamon stick

4 green cardamom

rice noodles
-
bean sprouts
-
red chilli, sliced
-
shallots, sliced
-
fresh mint leaves
-
fresh basil leaves

lime wedge
Pho Spices
To serve
Directions
In a large stock pot add 2 litres of broth and bring to a simmer.
Add all pho spices into a spice/ tea strainer and add to the stock pot (if you don't have a tea strainer add spices and scoop out later)
Add water, mushrooms, carrot, onion, and leek into stock pot and simmer for 20 minutes.
While that cooks, prepare rice noodles if you plan to serve with them.
Once pho is ready, remove the pho spices/ tea strainer to serve.
In a bowl, add your rice noodles, top with pho, bean sprouts, fresh mint, basil, lime, and chilli.
