Ingredients

1/2 jar of our famous satay paste
-
1tbs coconut oil
-
1 brown onion, sliced

400ml coconut cream
-
2 tbs organic chicken or veggie broth
-
200ml boiling water
-
1 eggplant, chopped roughly
-
2 carrots, sliced
-
1 broccoli, chopped into florets
-
1 zuchini, sliced
-
250g mushrooms, sliced

2 cups biodynamic rain fed rice

Crushed peanuts, to serve

Chilli, to serve

Shallots, to serve
Directions
If you’re serving with rice, pop that on now.
Melt 1 tbsp coconut oil in a large saucepan on medium heat, add onion and sauce for 3 minutes.
Stir in 1/2 jar of satay paste and cook for 1 minute until fragrant.
Add coconut cream, broth and boiling water. Stir thorughly until combined
Add in vegetables and bring to the boil. Once boiling turn down heat and simmer uncovered for 20 minutes or until cooked.
Serve with rice and enjoy!
Recipe Note
If you want to add some meat, chicken or fish add this in when sauteeing the onion in step 2.
