Ingredients

3/4 cup oil (we used coconut)

2 eggs

1 tbsp finely grated orange zest plus extra to decorate

1/4 cup freshly squeezed orange juice, strained

1 cup thick coconut yoghurt (or Greek style)

1 cup caster sugar

2 cups self raising flour

1-2 tsp vanilla paste

Dried blood oranges to decorate

1 cup icing sugar, sifted

1 tbsp orange juice
-
1-2 tsp vanilla paste
-
1-2 drops pink food colouring
-
1/3 tbsp boiling water

Directions
Preheat oven to 160c. Grease a Bundt tin and dust with flour.
Place the oil, eggs, orange rind, juice, yoghurt, vanilla and sugar in a large mixing bowl and whisk to combine.
Sift in the flour and whisk until smooth.
Pour into the tin and bake for 50-55 mins or until cooked when tested with a skewer.
Allow to cool in the tin for 5 mins.
To make the icing, place the icing sugar into a medium bowl. Add the orange juice, vanilla, pink food colouring and water and mix until smooth. If the icing is too runny simply add a little more icing sugar. If it’s too thick add a little more water/juice.
Carefully turn the cake out onto a cake rack. (See *note) Let cool for 2 mins and then spoon your icing over the cake.
Sprinkle the extra orange zest over and decorate the cake with the dried blood oranges.
Allow the icing to set for 10 mins before serving with a hot cuppa.
Recipe Note
if you have trouble removing cake from Bundt tin. Boil the kettle and fill the sink with a few inches of water. Carefully place the Bundt tin in the water making sure not to get water on your cake and let it sit for a few mins. The steam will loosen the cake from the tin and it should pop right out when flipped out onto your cake rack.
