Ingredients
-
½ cups dark chocolate chips, or keto buds
-
2 tbs refined or extra virgin coconut oil
-
1 cup unsweetened desiccated coconut
-
3/4 cup rolled oats
-
1 cup rice puffs
-
Chocolate-covered almonds and/or mini eggs for decoration
Directions
Fill a saucepan with water and bring it to a gentle boil. Place a heat-proof glass bowl on top to create a double boiler, then add your chocolate chips and coconut oil. Stir continuously until melted and smooth. Alternatively, melt them in the microwave - stopping every 20–30 seconds to stir until fully melted.
Add in your oats, puffed rice and desiccated coconut. Stir well.
Spoon the mixture into a silicone muffin tray, then use the back of a spoon to gently press and shape it into nests by creating a small well in the centre.
Refrigerate until hard.
Decorate with chocolate almonds and easter eggs!
