Apricot and Almond Bars

Ingredients

½ cup (130g) almond butter

1/3 cup coconut oil, melted

1/3 cup raw honey, maple or rice malt syrup

2 tsp. vanilla extract

1 ½ cups (30g) puffed brown rice

½ cup (30g) shredded coconut

½ cup (70g) toasted almonds, chopped

½ cup (100g) unsulfured dried apricots, chopped

1 tsp. salt
Directions
Whisk all wet ingredients together in a large mixing bowl.
Add dry ingredients and stir until well combined.
Tip mixture into a lined dish (I use a 2.6 litre glass Pyrex dish) and place into the fridge to set for at least 3 hours.
Slice into bars and enjoy! Note: The bars are best kept refrigerated, as they will soften and not hold together as well if left at room temperature.
